Cookin With Carmen, LLC provides health-conscience, flavorful, quality dishes that are inspired by the African Heritage diet.

The African Heritage Diet is a way of eating based on the healthy food traditions of people with African roots. This healthy way of eating is powerfully nutritious and delicious, and naturally meets the guidelines experts recommend for supporting good health (OldWays, 2021).  

Why we are different?

Cookin With Carmen, LLC provides a diverse cooking experience by connecting to African American heritage. Our heritage is “rich” in powerful nutrients that helps alleviates all the modern day dieseases that make the African American community “at-risk” for example diabetes, hypertension, high cholesterol, renal diseases, and asthma. 

Chef Carmen provides authenticity, transparency, and quaility when preparing dishes for clients. The southern hospitality is favorable among clients that the chef serves.

History

“Soul Food” is at the heart of traditional southern eating. Did you know that slaves were forced to eat the inferior animal parts their masters threw away?

Slaves cleaned and cooked pig intestines and called them “chitterlings.” They took the butts of oxen and transformed them into “ox tails.” Same thing for pigs’ tails, pigs’ feet, chicken necks, smoked neck bones, hog jowls and gizzards. As a black woman, these meats were often a part of my family recipes and used to “season” the pot as my grandmother often says.

Today, all of those inferior parts including smoked neck bones, ham hocks, bacon, fat back and salt pork, are currently included in soul food menus, either as main dishes or to flavor foods such as vegetables and dried beans and peas. 

The signifiance of the modern day soul food is accredited to our ancestors. They had to survive and thus they transformed these inferior parts into exquisite cuisines we are all familiar with today.

 

Our Influences

My ancestors are the driving force behind every dish I make. Cookin With Carmen gives people a lighter, healthier, fresh, alternative to eating. We partner with local farmers to ensure we use fresh organic ingredients in all of our dishes. The dishes we make include colorful fruits and vegetables, leafy greens, beans, yams, sweet potatoes, nuts, peanuts, rice, and whole grains.

Soul food to us is food that connects to the soul. We use herbs and spices to amplify all of our dishes.  America has somehow enticed us all to believe that if it does not have grease oozing from the food then it’s not a good dish; and that is simply not true in Cookin With Carmen’s world of cooking.

Cookin With Carmen focuses on providing people with a “soulful” taste in a health-conscious fashion.

 

The African Diaspora

African Diaspora is the term commonly used to describe the mass dispersion of peoples from Africa during the Transatlantic Slave Trades, from the 1500s to the 1800s. This Diaspora took millions of people from Western and Central Africa to different regions throughout the Americas and the Caribbean.

Our African ancestors landed in regions that featured different local foods and cuisines, as well as other cultural influences, that shaped our unique cooking styles. The African Heritage Diet is a plant-based, colorful diet based on vegetables, fruits, tubers and grains, nuts, healthy oils and seafood.
